Heart Healthy Raw Choc Orange Slice

Ingredients

Base

1 cup walnuts

¾ cup dates

Zest of 1 orange

1 tablespoon raw cacao powder

½ tsp vanilla extract

2 tablespoons Wellgrove Heart Health Extra Strength Olive Leaf Extract Liquid

 

Filling

1 cup cashews, soaked for 2-3 hours then drained

½ cup desiccated coconut

Zest of 1 orange

½ cup freshly squeezed orange juice (approx. 1 large orange)

2 tablespoons Wellgrove Heart Health Extra Strength Olive Leaf Extract Liquid

2 tablespoons honey

 

Top

100g 75% dark chocolate

2 tablespoons coconut oil

1 tablespoon Wellgrove Heart Health Extra Strength Olive Leaf Extract Liquid

 

Method

  1. Pre-prepare cashews by placing in a small bowl, cover with water and set aside for 2-3 hours.
  2. Prepare the base: Line a small square or rectangle baking tin with baking paper.
  3. Place walnuts and dates into a food processor. Blitz until crumbly.
  4. Add all other base ingredients into the food processor and pulse until well combined.
  5. Spoon into a lined baking tray and press down with a spatula. Smooth down and ensure base is even.
  6. Place into a freezer for 30mins.
  7. For the filling, drain cashews and add these and all filling ingredients into food processor. Blitz on highest speed until smooth and creamy. This will take several minutes and you will need to scrape down the sides with a spatula regularly.
  8. Take the base out of the freezer. Pour the filling over the base and smooth down with a spatula.
  9. Place back into freezer for 30 minutes.
  10. To make the topping, fill a small saucepan with a few inches of water and bring to a very gentle simmer.
  11. Break chocolate up into pieces and place in a large heat-proof bowl.
  12. Add coconut oil and Wellgrove Heart Health Extra Strength Olive Leaf Extract liquid to the bowl.
  13. Place bowl onto the saucepan to melt the chocolate. Stir often until chocolate is melted and ingredients are well combined.
  14. Take slice out of the freezer and pour chocolate over the top. Smooth the top with a spatula.
  15. Place back into freezer and freezer for at least 2-3 hours, preferably overnight before slicing into cubes or slices with a sharp knife.
  16. Store in freezer and remove 10-15mins before serving.
